Top Chef: Carolinas episode 12: Sieger Bayer eliminated

There was really one thought on our mind heading into Top Chef: Carolinas episode 12, and it was really quite simple: it would stink to go this far in the competition only to then be eliminated so close to the end.

Doing anything at this point in this season is going to be a challenge; yet, the Appalachian-themed cook-off tonight was harder than most. Not only were you tasked with trying to utilize the ingredients of the region, but also make dishes for a whopping 200 people. There was also an emotional component here in supporting Asheville, a group of people who have gone through quite a bit due to hurricane damage.

Sometimes on Top Chef, it can be hard to see an elimination coming. This time around, though, it felt at least a little bit easier to telegraph. After all, Sieger decided to serve chicken-liver pate — a cold dish on a hot day. That meant that you had to deal with temperature control and beyond just that, the idea that your dish is immediately going to turn off some diners.

In the end, it was Sieger and Jonathan who comprised the bottom this week, and this is where you do have to ask a number of questions. Even though judging is not meant to be cumulative, does it still matter? Jonathan’s biggest issue was acidity, so it really came down to an issue between texture and then flavor profile.

What was eliminated?

Sieger not only was sent home, but he did so with a pretty heated argument. This had to be one of the first times we’ve really seen someone push back at the judges over their exit, and it as especially ironic given that the show threw him a bone after he was sent packing the first time. Do we get the frustration? Sure, but it is also something that could leave a bad taste in viewers’ mouths.
