He continues to tell her, he trusts she will do the right thing. Ross has a betrayal phobia after Liz betrayed him twice, and he wants to know how much Demelza loves him.
Demelza tested him by giving him the Liz note about George, that night… She could have easily given it to him the next morning, and the night of regret wouldn’t have happened.
How Demelza responds to the temptation will say a lot about her character. Trust between Ross and her will be either strengthened or destroyed.
