I guess they want to keep the faith idea in the show, that Gabriel is always trying to save everyone. That is the same thing that led to the death of Andrea(Laurie Holden) a few seasons ago. She wanted to save everyone also. It’s a good thing that Gabriel got a tetanus shot right before the zombie apocalypse. Remember the rusty nail he stepped on 2+ seasons ago? Gabriel is a big character in the comic, so they may not be ready to kill him off in the show. Will he be able to talk any sense into Negan? Don’t count on it. I was never big on the Father Gabriel character. If they kill him off, it won’t bother me like killing off Abraham and Glen did.
