I agree with your list. The Faith episode, the longer version that was on the season 2 DVD, is the one to watch. Sam Heughan’s performance was once again Emmy worthy and to leave it out was a mistake. The child was Jamie’s as well and to leave out his anguish over her death and his full recommitment to Claire should be seen. It makes Caitriona Balfe’s performance better as well.

If I have to go with only six:
Sassenach
The Wedding
Faith
Je Suis Prest
Prestonpans
Dragonfly in Amber.

I don’t like Both Sides Now that much, and while I understand your reasons for including To Ransom a Man’s Soul, picking it up in a to watch list… it’s very hard to watch, and I think it is better watching it in context after all the other episodes.
I see that my list has a too big jump between The Wedding and Faith, maybe my list should be made of seven (I’d add The Devil’s Mark then).
Faith representing the French part, Je Suis Prest and Prestonpans go together and represent the War.
I agree completely about Dragonfly in Amber, favourite of both seasons for me too. It is the only one from season 2 that I have rewatched several times.
